Laissez FaireChristian's wines display an attitude of finesse and the individual character of each vineyard and the wines that they bare. Hand harvesting is performed with obsessive diligence and selection, with crucial attention to detail during pressing. Fermentation occurs in open top vats, spontaneously fermented and aged in large neutral barrels with no filtering, fining or addition of sulphur at any stage.
